This doesn't explain though why the matches were not played on Satruday and sunday jan 4-5 instead of sunday and Monday.

Yep, I guess it's because a large chunk of a city's population isn't in the city for the weekends, if Italians are anything like Bulgarians. So it's smart for business to postpone entertainment that requires attendance/being at home for when the most people are back from they were, hence scheduling a derby like Napoli - Inter pretty late on a day before the first workday of the week to maximise viewership.
