Yep, I guess it's because a large chunk of a city's population isn't in the city for the weekends, if Italians are anything like Bulgarians. So it's smart for business to postpone entertainment that requires attendance/being at home for when the most people are back from they were, hence scheduling a derby like Napoli - Inter pretty late on a day before the first workday of the week to maximise viewership.

What Wobblz says. It has nothing to do with what people want on their day off work, it's the fact that most people are not around during the long weekend.

And this is mostly for attendance purposes, you can watch the game from a remote village these days, but the purpose is to "respect" the holidays and not have any sporting events to get in the way of family time etc. A bit of a romantic idea that is dying of course in places like Italy where this type of social conservatism is still strong.
