Making Good Espresso

I recently got an espresso machine and have been using it for a while. The one problem I'm finding is I can't get a crema on top of the coffee. Any tips on how to do this? The coffee machine is a good one. Is it me or is it the fact I'm using Lavazza Rosso, which incidentally is a packet I've had open a few months as I was using it with a cafetiere, when I should be using another type?

Morphy Richards Mr. Cappucino. Not sure if it's a UK/Ireland domestic product or whether it's available in other places. The coffee still tastes good but I always think it tastes better with the crema.

Well theres the problem...you can't expect a sub £100 machine to produce even a decent espresso...you gotta upgrade man!

I think mine cost $500 or £300, and that is a cheap one!

Fuck me, tis espresso I want to make not golden goblets. Tastes good enough to me anyway but thanks. Million times better than instant with or without the crema!

While espresso machines are getting better and better, it is best to have a decent mocha machine in home and go out to Italian restaurant/bar for espresso.

When good espresso machines purely depend on pressure and its weight to survive the pressure, it really isn't fit for household product.

I have had lots of espresso from authentic Italian restaurants, including ones run and staffed by Italians in many countries, I have drunk espresso in Italy many times, I have had espresso in many coffee houses, and have never felt any explosion in my pants.

I have however, felt an unbelievably pleasurable experience from walking into a real pub with a blazing fire on a cold winter's evening (in a fireplace, not throughout the building!) and warming myself with an expertly produced and poured pint of Guinness with a proper whiskey (Jameson only), made up the road and not deteriorated by thousands of miles of importation, chaser.

You Americans really haven't sampled the pleasures of a real pub, real Guinness and real whiskey and when you do it will be YOU having the best orgasm of your life my friend.

Ireland, though in fact I'm not Irish I just live here, has real Guinness and whiskey, you boys just have imitation stout and the piss that Jameson wouldn't sell to us.

Coffee is for waking up in the mornings, real alcohol (not pisswater Budweiser and cat's piss bourbon) is the joy of life!!!

I don't think for a moment all Americans like American beer, not all Irish people like Guinness. I like Guinness but I generally drink Moretti. My point was though, that America doesn't really do "pubs", only bars which don't compare in my opinion. If you like Guinness in America though, your cock will absolutely explode if you ever try Guinness here in Ireland, there simply is no comparison between black Irish wine in it's home country and the imitation stuff they make in the rest of the world. An Italian will drink espresso in other countries. Just ask an Irishman to drink Guinness anywhere but home though!!!

Warm lager? WTF? No-one drinks warm lager except winos, it's pure cat. Cold red wine, save for a few specific types, that's awful too.

Although you can drink Guinness warm from a bottle, the pint is dreadful if it's warm. "Warming yourself up" is an expression we have, doesn't really have much to do with temperature of drink, more to do with getting out of the cold. Incidentally, do you have the Guinness Original bottles in America, it's nicer than the pint and it tends to travel better.

Has a pleasant burnt taste to it but is more of a man's drink than the pint so you might struggle with it ;).

Moretti is nice, I don't think it contains all the chemicals of the commercial brands. Incidentally, a few tips for good Guinness... (1)Never drink it from a pub/bar that doesn't sell a lot of it, it doesn't sit well in the barrell so the more it's being poured the better it'll be; (2)Never drink it in a bar with a long distance between the cellar and tap, it doesn't draw well; (3)It has to be poured properly so the head is smooth and looks like it could support a small coin being placed on it, basically a proper pint looks beautiful; (4)If a barman draws anything on the top of it with the head, for eg a shamrock, punch the bastard, would you draw lipstick on the Mona Lisa?; (5)If at all possible get an Irishman to pour it, some nationalities have skills others can only dream of, an Irishman's is the knowledge of how to treat Guinness properly, basically like a lady.

The crema is made from the robusta beans. Lavazza Rosso apart of being rubbish is from what I know 100% arabica, just like illy, so you won't get any crema. Besides, you can only get decent crema from real Espresso machines, like Isomac starting from 1000$ upwards. My dad got himself one for his birthday and honestly, it's better than the espresso you can get in many cafés outside of Italy.

As far as the rest...Lagavulin >>>> The Glenlivet >>>>>>>>> anything else.
